I just inherited a garden plot with a giant amount of sage already growing in it. So... what do I do with it?

We're talking leaves that are four inches long and growing in a bunch two feet in diameter. There's only so much sage butter I can make and Thanksgiving is half a year off so I'm kind of at a loss. Are there any awesome sage-heavy recipes I can dive into?
