Super Tasty Thai Larb (Minced Meat) Salad

I love this super tasty, super simple Thai Larb Salad that prepped and cooked in about 20 minutes. Perfect for the summertime to eat in a lettuce wrap or with rice/quinoa for a more substantial meal. (I used ground pork, but chicken, and turkey all work well in this dish.)

Ingredients:

  • 1 lb ground pork
  • 3 tbsp lime juice
  • 3 green onion stalks minced
  • ¼ cup shallots minced
  • ¼ cup mint minced
  • ¼ cup cilantro minced
  • 1 ½ tbsp fish sauce (can substitute 1 tsp salt)
  • 1 tsp sugar
  • 1 tsp chili powder (optional)

Directions:

  1. In a non-stick pan add the ground pork and pour half a cup of water.
  2. When the pork is fully cooked add in the, green onion, shallots, mint, cilantro, fish sauce, sugar, and lime juice. Mix well.
  3. Adjust the sweet, salty, sourness to your personal preference.
