A good, simple tagine

Chicken and Beans Tagine

A chicken and beans tagine is perhaps not "official" in the sense of North African cooking, but the results are still a delicious treat.

Ingredients

  • Olive oil

  • 4 chicken thighs (you can add legs if you like)

  • Up to 8 oz. mushrooms

  • 1/2 cup chicken broth

  • 1 small onion, diced

  • 3-4 cloves garlic

  • 1/4 to 1/3 cup fresh basil

  • 1 15-oz. can white beans (or better, make your own by soaking them over night, etc.)

Directions

In a frying pan, brown the chicken on both sides and place in the tagine.

Brown the mushrooms in the same pan and add to the tagine.

Place the white beans, onions, garlic and about half the basil in the frying pan, add the chicken broth and cook for just enough time to get everything warmed through.

Add the beans to the tagine, place the lid on and cook for at least an hour. This is one of those things that as long as it's moist, you almost can't overcook it.

Finally, add a little basil on the end as a garnish.
