Deep Fried Passion Fruit

Ingredients

1/3 cup corn flour 1/3 cup plain flour 25g sugar 1 tsp baking powder Pinch of salt 30g of 70% dark chocolate 1/4 cup hot skim milk 1/4 cup cold skim milk 1 egg white whipped to soft peaks 10 Naked Passion Fruit

Directions

  1. Fill a deep fryer with canola oil and bring to 180°C.
  2. Combine flours, sugar, baking powder and salt in a bowl.
  3. With an immersion blender blend together the hot milk and chocolate until emulsified.
  4. Add this to the flour mixture and mix well, to this add the cold milk and again, mix well.
  5. Fold through the whipped egg white.
  6. Skewer the passion fruit and coat well with batter, using a spoon to assist you, then deep fry at 180°C for 5 minutes, rotating it every 30 seconds.
  7. Drain the deep fried passion fruit and roll it in the purple sugar mixture, coating it well.
  8. To make the sugar mixture, combine 20g of powdered sugar with 100g caster sugar and drop in the food colouring with stirring. Mix in a blender to create an even purple sugar.
  9. Serve hot on a chocolate custard or with ice cream or however you like.
