- Ingredients
- 2 1/2 C Flour
- 1/3 C Cocoa
- 1/3 C Vegetable Oil
- 1 C Water
- 1 1/4 C Sugar
- 1/2 C Shortening
- 1/2 tsp Salt
- 1 tsp Vanilla
- 2 Eggs
- 2 tsp Baking Soda
- 2 Tbsp Red Food Coloring
- Cream Cheese Icing
- 8 oz Cream Cheese
- 1/4 C Unsalted Butter
- 3 C Powdered Sugar
- 2 tsp Vanilla
- Instructions
- Preheat Oven to 400°
- In a medium size bowl measure out the flour, cocoa, salt, and baking soda stir with a whisk
- In a large bowl combine the sugar and shortening and mix using an electric mixer
- Next add the eggs and mix until smooth
- Add the water, vegetable oil and vanilla
- Once the wet ingredients are combined start to add the dry ingredients one half at a time
- Scrape the bowl to incorporate everything
- Lastly add the red food coloring. Make sure that everything is mixed thoroughly. I used a spatula after I mixed with a mixer to make sure all the dye was incorporated.
- On a parchment lined cookie sheet or a sheet pan scoop out the batter. I used a 2” cookie scoop.
- Place in a 400° oven and bake for 8-9 minutes.
- Once cake has cooled create sandwiches.
- I put about 2 to 3 tablespoons of icing per whoopie pie
- This recipe will make 14-15 Whoopie Pies
- Cream Cheese Icing
- Cream together room temperature butter and cream cheese.
- Add the powdered sugar and vanilla and mix on med to high speed for 3 to 5 minutes.
