[Request] Baked cheese recipe

A lebanese restaurant near me serves a baked cheese appetizer - it comes out smoking hot in the earthenware dish, browned on top, and gooey and mild on the inside. great for piling on bread. Slightly stringy as it cools down. a VERY light yellow, almost white. Small amount of grease/oil. Any idea what cheese this could be?
