I've got a few pounds of carrots that I'm trying to go through before they go bad. I've already made carrot fritters (excellent), and am making a carrot cake for my dad's birthday and carrot souffle, but I'll still have plenty left. Does anyone have any good recipes other than the various carrot soup and roasted carrot recipes I find on google?
