My first ever tomato pie, either eaten or cooked. Wow! So good! Paula Deen recipe, as follows:
Tomato Pie
- 4 tomatoes, peeled and sliced
- Salt
- 10 fresh basil leaves, chopped
- 1/2 cup chopped green onions
- Black pepper
- 1 9 inch prebaked deep dish pie crust
- 1 cup shredded mozzarella
- 1 cup shredded cheddar
- 1 cup mayonaise
Directions
- Preheat your oven to 350. (To peel tomatoes, plunge each tomato into boiling water with tongs, and leave for about 60 seconds and you will visibly see the skin start to crack. It helps to take a knife and make an X on the non-stem end of the tomato. After removing from the boiling water, immediately plunge into an ice water bath. The skin should peel easily after that.)
- Slice your tomatoes (I used a mandolin for uniformity) and place them in a colander in the sink. Layer the tomatoes and salt them. Allow them to drain and sit like this for 10 minutes.
- Pat the tomatoes dry with a kitchen or paper towel.
- Layer the tomatoes, basil, and green onions in your pie shell. Season with more salt, and pepper.
- Mix up the grated cheeses and the mayo. I also added about a tablespoon of garlic powder to this mix.
- Spread your cheese/mayo mix on top.
- Bake for about 30 minutes until the cheese is melted and the top is slightly browned.
- Cut into slices and dig in!
Notes: I wanted to be lazy and not peel the tomatoes. This is a big pain in the ass, but it was only 4 tomatoes, so I thought what the hell. It wasn't that time consuming at all. Making the X on the bottom of the tomato was a game changer for me. Super easy. I also added a little bit more cheese on top after spreading the mayo mix on, because CHEESE.
