Cheddar & Bacon Biscuits

Ingredients:

  • 2 cups flour (plus some for rolling)
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/2 cup butter (chopped)
  • 1 cup cheddar cheese (shredded)
  • 3-4 strips of bacon (chopped)
  • 1/2 cup milk
  • 1 egg (beaten)

Directions:

  1. Preheat your oven to 350° F.

  2. In a deep skillet, cook the bacon on medium-high heat. Set cooked bacon aside to cool before chopping. Leave bacon grease in the skillet and set aside for later use.

  3. Using either a standing mixer or a regular mixing bowl, combine the flour, baking powder, and salt.

  4. Add the chopped butter, the cheddar cheese, and the bacon. Stir either in the standing mixer or with your hands until the mixture resembles course bread crumbs.

  5. Make a well in the center of the flour mixture.

  6. In a small bowl, beat together the egg and the milk until just combined.

  7. Pour the egg mixture into the center of the well in the flour mixture.

  8. Stir all ingredients until well incorporated. Then turn the dough onto a lightly floured surface. Knead the dough two or three times only if there are wet and/or crumbly patches.

  9. Either roll the dough out with a rolling pin or press it out with your hands to a half-inch thickness.

  10. Cut out the biscuits using a round cutter (although I used a glass jar). Press any remaining dough together and cut out as many more biscuits as you can.

  11. Bake the biscuits in the oven for approximately 20 minutes.

While the biscuits are baking, you might consider working on my recipe for Jalapeno gravy. Find it here: http://ift.tt/1qI952a
