Ingredients:
- 2 cups flour (plus some for rolling)
- 2 tsp baking powder
- 1 tsp salt
- 1/2 cup butter (chopped)
- 1 cup cheddar cheese (shredded)
- 3-4 strips of bacon (chopped)
- 1/2 cup milk
- 1 egg (beaten)
Directions:
-
Preheat your oven to 350° F.
-
In a deep skillet, cook the bacon on medium-high heat. Set cooked bacon aside to cool before chopping. Leave bacon grease in the skillet and set aside for later use.
-
Using either a standing mixer or a regular mixing bowl, combine the flour, baking powder, and salt.
-
Add the chopped butter, the cheddar cheese, and the bacon. Stir either in the standing mixer or with your hands until the mixture resembles course bread crumbs.
-
Make a well in the center of the flour mixture.
-
In a small bowl, beat together the egg and the milk until just combined.
-
Pour the egg mixture into the center of the well in the flour mixture.
-
Stir all ingredients until well incorporated. Then turn the dough onto a lightly floured surface. Knead the dough two or three times only if there are wet and/or crumbly patches.
-
Either roll the dough out with a rolling pin or press it out with your hands to a half-inch thickness.
-
Cut out the biscuits using a round cutter (although I used a glass jar). Press any remaining dough together and cut out as many more biscuits as you can.
-
Bake the biscuits in the oven for approximately 20 minutes.
While the biscuits are baking, you might consider working on my recipe for Jalapeno gravy. Find it here: http://ift.tt/1qI952a
