This is my favorite cookie recipe! The best part is that it's very unique because of the sponge like consistency they get from the pumpkin. I got it from a girl on my dance team after a few months of heckling.
Recipe:

1/2 cup unsalted butter

1 cup brown sugar

1/2 cup white sugar

1 egg

1 teaspoon baking soda

3 teaspoons cinnamon

2 teaspoons ginger
-
1 teaspoon clove
-
15 oz can of pumpkin (I use Libby's)

2 1/2 cup flour

1-2 cups chocolate chips (I use 1, depends how chocolaty you like it)
Preheat oven to 375
In a mixer cream together butter and sugar until smooth. Add egg, scraping down the sides of the bowl with spatula. Then add baking soda, cinnamon, ginger, and clove, mix. Add pumpkin, scraping down sides of bowl again. Add flour in half cup increments, scraping down sides of bowl. Stir in chocolate chips.
The cookie dough will seem more sticky like a bread dough consistency, this is correct though. Line baking sheets with parchment paper (or silicone sheets) and plop 1 inch blobs on there. Bake for 13-15 minutes, the cookies will turn a lighter orangy-brown. Devour
