[Question] best ideas for "Bachelor Chow"? i.e. quick recipes using simple but healthy ingredients in small serving sizes.

I have some good ideas in my repertoire, but I'd love to expand it with your suggestions. I tend to prefer veggie-heavy dishes with more chicken and fish, less pork and beef. I think mushrooms and olives are gross though. Can you help a brother out?
