Unbelievable Chocolate Mousse

This is my version of the recipe in the Nuts About Chocolate cookbook (from Vancouver).

You need a food processor and a mixer to make this. Note that it includes raw eggs, so buy your eggs the day you make this.

WARNING: To the gentlemen who make this- this recipe may make your chocoholic lady-friend swoon!

Ingredients:

2 cups Semi-sweet chocolate chips
1/3 cup Boiling water
5 Egg yolks
4 Tbsp Butter, softened
5 Egg whites
1 tsp Vanilla
250 ml (1 cup) Whipping cream

Directions:

• Process chocolate chips in food processor for 30 seconds.
• Add boiling water slowly to the food processor and continue to process until smooth. Scrape sides to ensure everything is consistently mixed.
• Separate egg yolks from whites and put whites in a bowl. Add yolks to chocolate mixture in food processor and continue to process.
• Add vanilla to chocolate mixture and process a bit more.
• Remove contents of food processor and place in a large mixing bowl.
• Beat egg whites in a small mixing bowl until stiff. Add to chocolate mixture and whisk to combine.
• Clean the small mixing bowl you used for the eggs whites. Pour in whipping cream and beat until it’s fully whipped. Add to chocolate/egg white mixture and whisk until fully mixed.
• Pour into serving bowl or individual serving dishes, cover with plastic wrap and refrigerate until firm.
