Indonesian style sambal. Really easy and really spicy!

This is very spicy and goes great as a condiment with most asian food. Please be careful to wash your hands after handling the chillis or better yet wear plastic gloves. Also some goggles would be good as the frying chilli is quite noxious!!
This makes a small amount good for a meal condiment between 2 - 3 people.

Ingredients
-1 cup chillis (red or green Thai chillies) -3 or 4 dried red chillis
-0.5 cup of garlic cloves
-1 tbsp salt
-3 tbsp white vinegar
-2 tbsp veg oil for frying

Method
1. Put chillis, dried chillis and garlic in a food processor and pulse until you have a course paste.
2. On a medium flame heat up the oil in a frying pan. 3. Add the chilli mix and the salt and fry on medium heat for around 3-4 minutes.
4. Add in the vinegar and stir and then take of the heat.
5. Put in a glass jar or other small container.
