Very good Indonesian beef curry recipe 'Daging Besengek'

I made this recipe last night and it turned out absolutely incredibly. I served it with homemade sambal

Ingredients
-0.5kg beef cubes
-2 sticks lemongrass bruised
-1cm galangal (I used ginger as I didn't have any galangal)
-4 kaffir lime leaves
-200ml beef broth (I used chicken broth)
-400ml coconut milk
-25ml tamarind juice
-vegetable oil for frying

Spice Paste
-8 shallots
-4 cloves garlic
-5 candlenuts (hard to find, I used a handful of plain peanuts)
-1/2 tsp cumin
-1/2 tbsp coriander seeds
-1 tsp turmeric powder or 1cm fresh turmeric
-2 tsp salt
-1 tsp sugar
-1/2 tsp black peppercorns
-5 red chillis -shrimp paste (belechan) - optional

Method
1. Blend all the spice paste ingredients in a blender until you have a paste. If you are putting shrimp paste in, lightly toast it in a dry pan beforehand.
2. In a very hot pan fry the beef until it is browned. Remove and set aside.
3. In the same pan as the beef fry the spice paste, the lemon grass and lime leaves on medium heat until aromatic, maybe 2mins
4. Add the beef in and coat in the paste
5. Add broth, coconut milk and tamarind
6. Cook for as long as possible until beef is tender, keeping topped up with water (I used a pressure cooker and cooked it for around 30mins). Remove lemongrass and lime leaves.
7. When the beef is tender, reduce down until the curry is nice and thick.
