[Request] You have a kilo (2.2lbs) of good roasting beef, how do you make it last a week?

I always hear things like

you can make so many meals from a roast chicken

And I suppose you can, but call me a greedy bugger, a roast chicken tends to last a weekend for me.

So I now have a kilo (2.2lbs) of good quality topside beef joint and I'm wondering what can I do to make it last a week. i'll probably roast it on the Monday and have some for lunch and dinner, but what can I make with it for the rest of the week? What are some good post-roast beef recipes?
