Blueberry ginger oatmeal

I know that sounds strange but bear with me. I’ve always been a huge fun of ginger – I make a special ginger tea when I’m ill, and constantly throughout winter to help keep my immune system strong. Ginger has so many health benefits it’s unreal. However, I haven’t really incorporated it into my cooking very much. I bought a really, really large piece of ginger root last week, so I decided to experiment a little. What have I been doing this whole time?!? Basically, it is my new favourite ingredient and I’m tossing it into so many recipes. This one’s very easy – as all oatmeal recipes usually are! This is just too delicious. All hail the ginger root.

INGREDIENTS

  • 1 CUP OATS*
  • 1 PIECE OF PEELED GINGER ROOT (ABOUT THE SIZE OF A TABLESPOON)
  • 3/4 CUP OF WATER
  • 1/4 – 1/2 CUP COCONUT MILK ( I USE ONE CALLED ‘KOKO’)
  • LARGE HANDFUL OF FRESH BLUEBERRIES
  • 1 TSP HONEY
  • SMALL HANDFUL OF FRESH BLUEBERRIES
  • 1TSP CHIA SEEDS
  • LARGE HANDFUL OF DESSICATED COCONUT

I’ve recently realised that soaking oats brings out all the good nutrients in them. I’m a huge fan of overnight oats but it never occurred to me that soaking them before using them in oatmeal would bring out the goodness in them. You don’t have to do this of course, but if you’re planning ahead maybe soak them in water for a few hours/overnight. I love learning new tricks! Place the oats, water and coconut milk into a saucepan on a medium heat. Cut the ginger into very small pieces (or grate if you prefer), and add to the pan. Then toss in the blueberries and the honey. Voilà! Let the pan simmer for a little while so all the flavours leak out and you get a beautifully purple mixture. I love using blueberries in anything as they make the dish look so vibrant. I topped it off with some more blueberries, dessicated coconut and chia seeds (put chia seeds into all your breakfasts!!). That’s it really, there isn’t much to it all. I have to say breakfasts are my favourite to make and eat. I’m not quite sure why – possibly because my love for fruit is a little insane and I eat as much fruit as I can. Also I love waking up and taking time to create a very pretty plate – I always have to make it look perfect.
