Easy Buffalo Chicken Sweet Potatoes

Ingredients:

2 medium-sized sweet potatoes

2 cups of shredded chicken breasts

2 Tbsp light mayonnaise

3-4 Tbsp hot sauce (I like Frank’s)

1/2 tsp onion powder

1/4 tsp garlic powder

1 tsp dried parsley

fresh parsley to garnish (optional)

shredded cheese (optional)

Directions:

  1. Bake or microwave the sweet potatoes until cooked completely (about 6 minutes each in the microwave, or 1 hour in the oven at 400 F)

  2. Mix the shredded chicken with the rest of the ingredients, stirring until well combined

  3. Slice sweet potatoes along the top, open them up to make a larger space, and stuff them with the buffalo chicken mixture. Top with cheese (if desired)

  4. Bake at 400 F until the tops are browned, about 15 minutes.

5.Garnish with fresh parsley and serve with additional vegetables
