These cookies actually started out as a complete joke. I had never baked cookies (or really anything) before, but I have two coworkers who are great at baking and quite passionate about it. Jokingly, another coworker and I proposed that we ALL bring in cookies and have an exchange. I didn't expect them to seriously consider doing so with such short notice, but by the end of the day I realized they were likely going to bring some in the following week. One of the women said she'd bring in triple chocolate cookies. I challenged her by saying I'd bring in quadruple vanilla cookies. They never take me seriously, because I joke around all the time so I thought it'd be hilarious if I actually did come up with a recipe and made the cookies. I looked up a quadruple chocolate chip cookie recipe and tweaked it heavily. I got very experimental with the ingredients, but ultimately after a ton of research and effort they came out quite well especially for a first attempt at baking. The recipe is a little busy, I know, but once my creative juices got flowing I just went with it. Wasn't crazy about them without the frosting at first and wasn't sure what to make of the flavor in the beginning even with the frosting (though it was pretty good; I just became very critical of myself even though it was a joke). They actually did grow on me significantly the closer I got to finishing them. They taste pretty decent. I think it's mainly just hard to set expectations for the taste because they don't have a dominant flavor and it's hard to categorize what you are tasting aside from the peanut butter chips. I got positive responses from my coworkers and manager who tried, including the two women, whose baking skills I respect. One thing I can promise is that they come out very soft if you follow the directions. Thought I'd share. If you're adventurous enough to dare to try it, let me know how it came out.
Ingredients:
- 1.5 sticks of unsalted butter
- 2 teaspoons of vanilla extract
- 1/2 cup of light brown sugar
- 1/4 cup of granulated sugar
- 2 large eggs
- 2 tsp cream cheese
- 1 tbsp of maple syrup
- 1/4 cup molasses
- 1 pk instant vanilla pudding mix
- 1/4 cup Powdered peanut butter
- 4 oz melted white chocolate
- 1/2 cup of yogurt
- 2 cups all-purpose flour
- 1 tsp baking soda
- Salt
- Pumpkin spice
- 1 cup peanut butter chips
- Vanilla marshmallow frosting
Prep & Cooking Directions:
Leave butter out for 15-20 mins so it warms to room temperature; cut into smaller squares to speed up process.
1.5 sticks of unsalted butter, 2 teaspoons of vanilla extract, 1/2 cup of light brown sugar, 1/4 cup of granulated sugar, 2 large eggs, 2 tsp cream cheese, 1 Tbsp of maple syrup, 1/4 cup molasses
1. Mix the above ingredients well with a whisk until texture is creamy.
1 pk instant vanilla pudding mix, 1/4 cup Powdered peanut butter, 4oz melted white chocolate
2. Scrape down sides of bowl; mix in the above until just combined
1/2 cup of yogurt
3. Scrape down sides of bowl; mix in the above until just combined
2 cups all-purpose flour, 1 tsp baking soda, salt to taste, pumpkin spice to taste (be conservative about how much you use)
4. Scrape down sides of bowl; mix in the above until just combined
1 cup peanut butter chips
5. Scrape down sides of bowl; mix in the above until just combined
Use 1/4-cup and your hands to measure & form approximately 17 equal-sized mounds of dough. Roll into balls, and slightly flatten. Don't forget to flour the measuring cup and your hands. The dough can be quite sticky. Also, consider chilling the dough in the bowl for an hour and a half to help with this process.
Place mounds on a large plate or tray, cover with plasticwrap, and refrigerate for 3 hours. Subtract any time you took to chill the dough previously before shaping.
Preheat oven to 350F and lightly grease the baking sheet. Place dough mounds on baking sheet, spaced at least 2 inches apart and bake for about 15 minutes. Cookies will firm up as they cool. Allow cookies to cool on baking sheet for about 10 to 15 minutes.
Vanilla marshmallow frosting
6. Apply frosting to center of each cookie once the cookies cool; add sprinkles for decoration.
