Reuben Egg Rolls

Made these for an upcoming St. Patty's day party and they're awesome.

  • 2-2.5 lbs corned beef, sliced thin and chopped into about 1/4" pieces
  • 2 15 oz cans sauerkraut, drained, and slightly squeezed to remove some liquid
  • 24 oz. shredded swiss cheese
  • About 40 egg roll wrappers
  • Olive Oil or cooking spray
  • Russian dressing for dipping

Preheat oven to 400 degrees

Combine corned beef, sauerkraut, and swiss cheese in a large bowl; mix well.

Using about 3 tablespoons of the mixture for each egg roll, create/roll about 40 egg rolls, here are some easy instructions.

Brush each egg roll lightly with olive oil, or spray lightly with cooking spray.

Place on cookie sheets and bake for about 15 minutes or until golden brown.

Serve with Russian Dressing.
