Seoul Breakfast Sandwiches

In Seoul, there are these street vendors that sell the most amazing breakfast sandwiches! They are essentially egg omeletes with cabbage and diced carrots in between buttered toast. These Seoul breakfast sandwiches are easy to make, fill the belly and nice for an on-the-go breakfast! If you are more of a visual learner – video walk-thru here

 What do I need (Serving size for 1):
  • Sandwich bread – 2 pieces, each piece around 80~100 grams
  • Egg –  1
  • Cabbage – 0.5 cup
  • Carrot – 0.3 carrot
  • American cheese – 1 slice
  • Sliced ham or bacon – 1 slice
  • Sugar – 0.5 teaspoon
  • Salt – pinch
 How do I make it?
  • Thinly slice (julienne) cabbage and carrots and place in mixing bowl (note: leave some of the cabbage and carrots strip to the side for topping the egg).
  • Drop an egg into the bowl and mix thoroughly with cabbage and carrots. Season with a few shakes of salt.
  • Put butter on the frying pan and toast both sides of your bread. Lightly butter the pan again and pour egg mix onto frying pan. Cook the egg omelet and flip-over when the egg is fully set. Finish by cooking the other side.
  • Then lightly sprinkle sugar over the egg.
  • Set egg aside and fry-up the ham.
  • Place egg, cheese, and ham onto bread.
  • Then add the extra raw cabbage and carrots on top.
  • Add a layer of Ketchup (or other sauce of your choice) and enjoy.
