Slow Cooker BBQ Chicken Quarters

I created my go to BBQ chicken tonight after some experimenting with various rubs. Chicken was tender and absolutely delicious.

Recipe and directions :

Prep chicken quarters by trimming of excess fat and dry thoroughly.

Rub Recipe

  • 1/2 cup brown sugar (dark or light)
  • 2 tablespoons paprika
  • 1 tablespoon Kosher salt
  • 1 tablespoon ground black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon chili powder
  • 1 tablespoon dried rosemary ground up

You'll have plenty left depending on how many quarters you can fit in your slow cooker.

When chicken is trimmed and patted dry, lift skin and apply rub underneath. Pull the skin back and cover the outside of chicken in rub. Allow chicken to sit in the fridge at a minimum of 2 hours. I usually apply the rub the night before. Reserve a few tablespoons for transitioning between slow cooker and oven.

Place the chicken quarters in the slow cooker on low for approximately 6 hours. I can only fit two quarters in my slow cooker. I prefer to use parchment paper for lining the cooker.

Remove the chicken after 6 hours and place on a broiler pan or similar. Brush the chicken with your favorite BBQ sauce. Sprinkle the chicken with more rub and a bit of brown sugar.

Place in the oven at 350 degrees for approximately 30 minutes or when the outside is sticky.
