This is a result of me experimenting with many different recipes. It's great because granola bars are very expensive! They taste great and you can't tell that they're (relatively) healthy, I even got my brother (who hates oats) to eat them, which I probably shouldn't have done because he ate all of them!
Recipe:

1 cup of dates (deglet noor or medjool)

1/4 cup honey

1/4 cup peanut/almond butter

1 cup toasted nuts (I used almonds and pecans)

1 1/2 cup toasted oats

And anything else you want! (I usually add chocolate chips)
Instructions:
Blend dates in a food processor until you have fine pieces (about 1 min). Heat honey and peanut/almond butter over low heat until it's warm and runny. Remove from heat an add dates to this mixture to soften them as well. In a large bowl combine oats and nuts and then add the honey, peanut butter, date mix (you can also add chocolate chips or anything else you like in granola bars such as dried fruit at this point). Line small pan with parchment paper and spread into the thickness you like, cool for 15-20 minutes.
