Peanut Sesame Coconut Curry Sauce

  • 2 tbsp. Sesame seeds marinated in hot brine (made with water and lots of salt or garlic salt)
  • 1 13 oz can of full-fat, unsweetened coconut milk
  • 2 oz red curry paste
  • 1 pinch of salt
  • 1 tbsp of apple cider vinegar or white vinegar
  • 1/2 cup water
  • 3/4 cup of unsweetened creamy peanut butter
  • 3/4 cup of coconut sugar

Mix well and simmer for 10 minutes

Keeps for a week.
