Superfood Chili

Ingredients:

2 lbs lean ground turkey or beef

2 red peppers, diced

1 large onion, diced

3 (15 oz) cans of beans of choice, drained (I use kidney and black beans)

3 (15 oz) cans of diced tomatoes

1 (6 oz) can of tomato paste

1 bag of frozen spinach or kale

1 bag of frozen butternut squash cubes

3 heaping Tbsp chili powder

1 heaping Tbsp cumin

1/2 Tbsp cinnamon

1/2 Tbsp onion powder

1/2 Tbsp olive oil

salt and pepper (to taste)

Directions:

  1. Dice peppers and onions and place them in a large frying pan with the olive oil. Stir fry them until the onions become translucent. One cooked, add them to a large crock pot.

  2. Now add the ground meat to the frying pan. Stir and chop the meat until cooked. Make sure to drain any excess fat in the frying pan before adding it to the crock pot.

  3. Add all other ingredients to the crock pot. It will be a tight fit, but you should have enough room to stir the contents thoroughly. If you do not have enough room, you can eliminate one of the cans of beans or add only half of the frozen vegetables.

  4. Cook on high for 4 hours, or on low for 8 hours. Store leftovers for up to one week.
