[Request] Looking for Inspiration - Pork Mince

Took some pork mince out of the freezer, ended up not using it for what I intended. Now I need to use it to make dinner for friends and I already fed them chilli the last four times they came round.

What can I do with mince that isn't chilli? I have one guest on a (not hilariously strict) paleo diet and one wheat (not gluten) allergy.

Spag bol is boring (to make and eat), and I fail at making burgers stick together without flour.
