Just a brief bit of background, I've worked in the industry in my younger years, went to FCI eons ago. But my background is in the savory side of things, and I don't have a great deal of baking experience.
One recipe that I've always wanted in my pocket but have never been able to find one that I really love is a nice moist simple vanilla cake. The vast majority of ones I've came across end up with an overly dense crumb, they're not all that flavorful, and perhaps to me worst of all they're dry!!! I've got some experience in regards to the way different sugars, and fats impact baking cookies, and their texture etc etc.. But I just don't know enough about cake making to even start to really trouble shoot much.
Sorry for the lengthy diatribe on my cake woes. I'd love to be enlightened by someone who knows far more than me! Any help appreciated!
