30-min spicy tomato saucyyy boneless skinless chicken breast, with basil/butter infused bulgur!

Been experimenting a lot with quick recipes for my busy schedule. I made this one SO quickly!

Ingredients

  • 1 shallot
  • 2 clove garlic
  • 2 1/2 cup arugula
  • 1/2 cup fresh basil
  • 2 cup diced tomatoes
  • 2 chicken breast (boneless, skinless) approx. 1/4 lb
  • 2 tbsp tomato paste
  • 2 tbsp orange juice
  • 3 tbsp olive oil
  • 2/3 cup bulgur
  • 1 tbsp butter
  • 1 tsp chili flakes
  • salt
  • pepper
  • sugar

Directions

  • Peel and chop garlic and shallots.
  • Rinse, dry, and season chicken breast with salt.
  • Heat olive oil in a pan and fry chicken for about 6-8 min. Remove from pan.
  • Add oil to the pan and lightly braise garlic, shallots, and chili.
  • Add tomato paste and sauté.
  • Deglaze with orange juice and canned tomatoes, season with salt, pepper, and sugar, and let simmer for about 15 min.
  • Meanwhile, cook bulgar according to package instructions.
  • Chop basil.
  • Add chicken to the pan and cook in tomato sauce for about 5 min.
  • Mix bulgur with butter and basil and season with salt and pepper.
  • Then serve with tomato sauce, chicken, and arugula.
