Polish Cooking: Beetroot Salad

Hello reddit!

Today I am continuing the salad series for my YT channel and it turns out you can easily make a beetroot salad if you have made a borscht that day. So... 2 recipes! One is for easy borscht, the other one is for the salad itself. Because for this recipe, you'll need some cooked beetroots. Let's begin!

INGREDIENTS: BORSCHT

1l chicken stock1 2

2 beetroots

3 garlic cloves

~100ml sour base

or 1 tbsp vinegar

or 1 tbsp lemon juice

marjoram

salt

pepper

INGREDIENTS: BEETROOT SALAD

2 cooked beetroots

1 onion

2-3cm horseradish3

1 tsp lemon juice

olive oil

salt

pepper

sugar

PREPARATION

BORSCHT:

1) Simmer beetroots, garlic, and marjoram in chicken stock for 30 minutes on low heat, don't let the liquid boil

2) Add sour base or vinegar or lemon juice and let it simmer for couple more minutes

SALAD:

1) Grate the cooked beetroots

2) Fry the onion till it softens up, browning it isn't necessary

3) Grate the horseradish3

4) Combine all the ingredients and season for taste

If you'd like to pasteurize, blanch the jars and insert salad inside. Close them. Insert towel into a pot of hot water and put there your jars. Towel will separate jars from hot bottom of the pot. Let your jars sit there for ~15 minutes. While they are hot, open them to equalize the pressure and immediately close. Let them cool down and store them in fridge. They'll last for months.

1 - Can be a chicken stock or salted water if you're not planning on making a borscht. If so, also skip the marjoram

2 - American units are in the video in annotations

3 - horseradish isn't pleasant for everyone and is an optional ingredient. If you're not a fan, skip it

PS. I know the colours are a bit off in the video. I had to filter it heavily cause apparently my camcorder decided to be dysfunctional in low light.
