Zucchini with minced Beef, Rice, Onions (just a touch), Salt & Pepper and Parsley!
INGREDIENTS
10 medium zucchini
1 medium onion
0.5 kg minced beef
¾ cups Rice
Half a bunch parsley
Salt & Pepper
Olive oil
Avgolemono
a) 2 eggs
b) 1.5 lemons
INSTRUCTIONS
Empty the zucchini with special tool or spoon
Sauté onion in olive oil
Add the minced beef and cook until brown
Add the rice, parsley, salt & pepper and stir for 3-5 minutes to thicken
Stuff zucchini with the filling
Place them in a pot
Cover ⅔ of zucchini with water and boil for 25-30 minutes in medium heat
Close the stove and set aside
For the avgolemono sauce
a) Beat the egg whites
b) Add yolks and stir
c) Add lemon juice and stir
d) Slowly add some water from the pot to the mixture and stir
e) Add avgolemono to the pot and move the whole pot to mix
