Blueberry-Almond Bread Gone Bananas

Ingredients

  • 300 g bananas, pureed
  • 1200 mg caffeine, anhydrous
  • 1 (50g) egg, large
  • 1/2 C (96g) Truvia (or other sweetener equivalent to 1 cup sugar)
  • 1/2 C almond butter
  • 1/4 C coconut oil or butter, melted
  • 1 tsp almond extract
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 C (56 g) coconut flour, sifted
  • 1/2 C (46 g) 100% whey protein, unflavored
  • 1/2 C wild blueberries, frozen
  • 1/2 C flour, white whole wheat

Directions

  1. Preheat oven to 350°F and prepare loaf pan (or mini loaf pan) by spraying with cooking spray and sprinkling with flour (I put a bit in a small strainer and lightly tap it over the loaf pan).
  2. Blend or whisk first 10 ingredients (up to, but not including, the coconut flour).
  3. Mix in coconut flour and whey protein very well.
  4. Fold in blueberries and flour until flour is moist.
  5. Bake for 45 minutes (30 minutes for mini-loaves) or until toothpick inserted in center comes out clean.

A serving of this bread is a great breakfast, especially if you don't have a lot of time in the morning (the caffeine in each serving is equivalent to about one-and-a-half servings of coffee).

The caffeine is what made me call this Bread Gone Bananas vice plain Banana Bread. The amount I included is noticeable, but not so much that it makes it unpalatable. You can increase it to 200 mg per serving and it would be more prominent, although still not egregious. However, anything higher than that and you're asking for trouble (200 mg is the recommended maximum dose of caffeine) and a shock to your taste buds from the bitterness.
