INGREDIENTS
2 tbsp vegan butter
1 brown onion, cut in half and finely sliced
2 cloves of garlic, crushed
500g / 17oz mushrooms, sliced
180g / 6oz pasta
½ tsp salt
½ tsp pepper
¼ tsp chilli powder
INSTRUCTIONS
Bring water to a boil in a saucepan.
Heat the butter in a frying pan.
Add the onion and garlic and saute for 5 minutes, add the mushrooms and saute for another 10 minutes.
Meanwhile cook the pasta according to the package instructions.
Add the spices to the mushroom and onion mixture.
Drain the pasta and return to the pan, add half the mushroom mixture and combine.
Divide the pasta over individual bowls and top with the remaining mushroom mixture.
