Cranberry Pecan Chicken Salad

Ingredients

  • 3 pre-cooked chicken breasts, finely chopped
  • ½ cup pecans, finely chopped
  • ½ cup dried cranberries
  • ¼ cup mayo
  • 3 T. stone ground mustard
  • juice from 1 lemon
  • 2 tsp. dried basil

Instructions

  1. Add pre-cooked chicken breasts that are finely chopped to a bowl. {I poached my, but you cook also grill or bake your chicken}.
  2. Add pecans, dried cranberries, mayo, stone ground mustard, the juice of 1 lemon, and dried basil to bowl with chicken.
  3. Mix together and serve on a piece of butter lettuce.
  4. Enjoy!
