Low-Carb Ham and Egg "Breakfast Cupcakes"

Ingredients

  • 12 eggs
  • 12 circular slides of ham (or ham substitute for veggie version)
  • salt and pepper
  • fresh chopped parsley (optional)

Instructions

  1. Preheat your oven to 375°F.
  2. Spray muffin or cupcake tin with cooking spray.
  3. Place a ham slide in each muffin cup, making a pocket in which to place the eggs.
  4. Crack an egg into each ham cup. Sprinkle with salt and pepper.
  5. Cook for 15-20 minutes, depending on how you like your eggs!
  6. Top with chopped parsley (or whatever else you like – green onions work well too!).
