Hello. This is one of favorite go-to recipes to bring to a barbecue. I learned this from my friend who is 1st generation Sicilian and he learned it from his Grandmother.

1 large, or 2 medium sized cauliflower heads cleaned and cut into normal size that pleases you.

Boil or steam until al dente.

Wash under cold water in colander.

While cauliflower is drying, Wash and scrub an orange. Preferably a large Valencia.

Cut orange in half. Remove seeds. Slice oranges into 1/8 strips. Rind on. Think, something a child can put in their mouth to make a smile with.

Combine cauliflower with orange slices in your Tupperware container.

Cover mixture with a few glugs of your favorite EVOO, a bit of your favorite salt and pepper, and mix.

Put in fridge overnight before BBQ. Bring cold. Enjoy.
