PIZZA EGG MUFFINS RECIPE

INGREDIENTS

  • 12 SLICES OF PEPPERONI

  • 12 SLICES OF CHEDDAR OR MOZZARELLA CHEESE

  • 12 CAGE FREE EGGS (I like Blue Sky Family Farms Eggs)

  • Salt & pepper to taste

INSTRUCTIONS:

  • Preheat Oven to 350 degrees

  • Place a slice of pepperoni in the bottom of all muffin tins.

  • ​Place slice of cheese in next, adding egg last. You might not want to use all of the egg white as it might overflow so have a bowl handy to discard the egg shells and extra egg whites.

  • Add salt & pepper & place in oven and bake for about 25 mins or until whites are almost set. Take out of oven and let cool for 5-8 mins and enjoy (or put in fridge until ready to eat).
