12 SLICES OF PEPPERONI

12 SLICES OF CHEDDAR OR MOZZARELLA CHEESE

12 CAGE FREE EGGS (I like Blue Sky Family Farms Eggs)

Salt & pepper to taste
INSTRUCTIONS:

Preheat Oven to 350 degrees

Place a slice of pepperoni in the bottom of all muffin tins.

Place slice of cheese in next, adding egg last. You might not want to use all of the egg white as it might overflow so have a bowl handy to discard the egg shells and extra egg whites.

Add salt & pepper & place in oven and bake for about 25 mins or until whites are almost set. Take out of oven and let cool for 5-8 mins and enjoy (or put in fridge until ready to eat).
