Green Lentils cooked in tomato sauce with garlic, onions and bay leaves!
Ingredients
500g Lentils
Olive oil for sautéing
3 medium onion
4 garlic cloves
3 medium tomatoes
1-2 bay leaves
Salt & pepper
Oregano
Vinegar (optional but highly recommended)
Feta Cheese and bread for serving
Instructions
Cover lentils with water in a pot, boil (not simmer) Lentils for 10 minutes and set aside
Sauté onions and garlic in olive oil until transparent
Add tomatoes, bay leaves, salt, pepper and oregano for 1 minute
Add lentils, cover with water, bring to a boil and then simmer until lentils are softened (30-40 minutes)
Top with vinegar, feta cheese and serve with bread on the side (optional)
