Rice Cream with Strawberry from Epcot’s Norway

Ingredients for Rice Cream: 1 1/2 cups water 1/4 teaspoon salt 1 cup white rice 2 cups milk 1 cup heavy cream 1/4 cup sugar 1 teaspoon pure vanilla extract

Ingredients for Strawberry Sauce: 1 cup strawberry preserves 1/2 cup water 1 teaspoon lemon juice

Directions: 1. Bring 11/2 cups of water and salt to a boil.

  1. Reduce stove heat to medium and cook the rice for 15 minutes. Make sure all the water has been absorbed.

  2. Add the milk and simmer for 20 minutes, again make sure all the milk has been absorbed.

  3. Transfer the mixture to a bowl and let cool.

In blender:

  1. Combine strawberry preserves, 1/2 cup water, and lemon juice and blend until smooth.

In a Separate Bowl:

  1. Whip the cream with the sugar and vanilla.

  2. Combine the whipped cream and rice.

  3. Divide the mixture into six bowls. Drizzle with strawberry sauce and serve.
