Recently got this delicious recipe by an old hippie calling himself Rafiki from Bisbee, AZ. It's full of cheese like a real quesadilla with the right amount of healthy veggies :D

Ingredients
8 wheat tortillas
one bunche of kale
about 250grams (0.5lbs) of grated Pepper Monterery Jack with chili cheese (or any cheese really)
2 big onions
2 bell peppers of any color
olive oil
salt & pepper
Instructions
Cut the peppers and onions in slices and grill them in the oven until they're nicely colored and cooked.
While your veggies are taking a lil' tan in the oven, you can start to sauté your kale in a pan with some olive oil. As kale can taste bitter for some people, make sure you cook it well until it is nice and soft.
Good! The first part of the recipe is done. You can add any vegetable you want (like mushrooms, tomatoes, corn, artichokes, ..) and prepare this first step up to a couple of days ahead if you want.
Time to make the Kalesadillas!
Fill half your tortilla with as much cheese as you like and add the vegetables on top of it
Close the tortilla in half. Put it in a hot pan with olive oil
Cook both sides for 3 to 5 minutes on medium heat, don't let the tortilla burn
Serve with sour cream and hot sauce of your choice. Add rice and salad on the side and enjoy
