why this works: crusty sourdough bread with some olive oil and salt. bird roasts on top of the sourdough and drippings turns the sourdough into a chewy/crusty stuffing-like bread. my family eats the bread as is, but you might like to turn it into croutons or stuffing.
the bread will need some time under the broiler after you've removed the roast bird to crisp it up.
