Cupcakes are super fluffy and moist and go super well with the dark chocolate cream cheese frosting!
Ingredients
Cupcakes
1 ¾ cup flour
1 tsp baking soda
1 tsp baking powder
¼ tsp salt
½ tsp ground cinnamon
¼ tsp ground nutmeg
¼ tsp ground cloves
1 15 oz can pumpkin
1/3 cup brown sugar
1/3 cup white sugar
½ cup veggie oil
1 ½ tsp vanilla extract
2 eggs
Frosting
8 oz cream cheese (room temp)
½ cup unsalted butter (room temp)
1 ½ cup powdered sugar
½ cup dark cocoa powder
2 tsp vanilla extract
Directions
Cupcakes
1. Whisk flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt together.
2. In a separate bowl, beat pumpkin, brown and white sugar, veggie oil, vanilla extract, and eggs until smooth.
3. Add dry ingredients to pumpkin mixture. Gently fold until no streaks remain. 4. Divide batter into cupcake liners.
5. Bake at 350 degrees for 17-19 minutes.
6. Cool on wire rack.
Frosting
1. Beat cream cheese and butter until smooth.
2. Add powdered sugar, cocoa powder, and vanilla extract. Beat until smooth.
