Pork Hock and Cabbage Soup*
This soup is overflowing with warm and comforting flavour – and all that cabbage is good for you, too!
Ingredients :
- 1 pork hock (about 1 pound)
- 2 tbsp olive oil
- 3 cloves of garlic, minced
- 2 carrots, peeled and diced
- 1 large onion, diced
- 1 two pound cabbage, cored and diced
- 10 cups of chicken broth
- 1/2 tsp of smoked paprika
- salt and pepper
Directions:
In a large stock pot over medium heat, warm the oil. Add the garlic, onions and carrots, stirring occasionally until the onion becomes translucent, about 5 minutes. Add the pork hock, cabbage and broth and bring to a boil over medium-high heat. After the soup comes to a boil reduce to simmer and cook until the cabbage is tender – this is approximately 20 minutes but let my soup simmer for approx 2 hours. Once the cabbage is tender add smoked paprika and salt and pepper to taste.
*This soup can easily be made vegan by using vegetable broth instead of chicken broth and removing the pork hock. Add 3 small, cubed, yellow potatoes and 2 diced celery sticks in the vegan version.
