Healthy Winter Comfort Food Recipe – Beef Stew with Roasted Garlic Mashed Potatoes

Ingredients – Beef Stew – Serves 4 2 medium carrots, chopped 500 grams lean stewing steak, diced 175ml red wine 1 large onion, finely chopped 1 tablespoon of olive oil ½ tablespoon of gluten free plain flour, or normal flour if not making gluten free 3 bay leaves 3 cloves of garlic, finely chopped 2 cups of water salt and pepper Ingredients – Roasted Garlic Mashed Potatoes 3 medium potatoes 4 garlic cloves 1 tablespoon of butter splash of milk Method – Beef Stew In a mixing bowl, pour the flour, garlic, salt and pepper over the steak and mix so nicely covered. Place a pan on high heat and pour in the olive oil. Next, stir in the onions. Once the onions are starting to become translucent, mix in the steak and fry until brown. Pour in the water, wine, carrots and bay leaves. Reduce the heat to the lowest setting. Cover the pan and leave to simmer for 2 hours. Method – Roasted Garlic Mashed Potatoes Preheat your oven to 180 Celsius. Wrap the garlic cloves in tin foil and place on the middle tray of the oven for 15 mins. Meanwhile, peel and chop the potatoes. Bring a pot of water to boil and pour in the potatoes until cooked. Drain the potatoes. Remove the garlic from the oven and peel the skin off. Add the garlic, milk and butter to the potatoes and whip with an electric whisk – this makes them super creamy and delicious.
