Russian Cheesecake for breakfast!? Yes please!!!!!

Zapekanka (Запеканка) is a Russian excuse to eat cheesecake for breakfast. This cake is made out of tvorog (творог) or farmers cheese, milk, eggs, sugar, and raisins. It is so easy! And who can resist cheesecake!!!

Course: Breakfast, Dessert Cuisine: Russian

Servings: Prep Time 1 9x13 cake 10 mins.

Cook Time 45-60 mins.

Ingredients:

3 16 oz farmer cheese or drained cottage cheese 3 eggs 8 tbsp. sugar 2 tbsp. milk (1/2-3/4 c. if using tvorog) 1/2 c. raisins 1 tbsp. oil

Instructions:

-Blend all ingredients, except the raisins, in a food processor. -Once blended and smooth, pour into a large bowl and mix in the raisins. -Pour batter into a greased 9 X 13 inch pan. Bake at 350 degrees for 45 minutes to an hour. If the top starts to brown, cover with foil and continue baking. The cake will jiggle just like a cheesecake even when it is done. Once you remove it from the oven and allow it to cool off a bit, it will become more solid. -Serve warm with sour cream :)
