I've been trying to make great taco shop/truck style salsa for a while and have never really been able to get the results I want. I want a salsa that is not too thick, nice and spicy, a good amount of tang. I would like it to be similar to the bright red salsa and/or similar to the darker brown salsa sometimes referred to as 'molcajete' salsa. I don't want it to be overly bitter but some bitterness is required. It just has to be balanced with the salty/sour part.

It LOOKS like the type of salsa I'm after but it didn't have the kick that I was looking for. I'm considering doing it again but charring the ingredients even more than I did this time.
