[Help] Ideas for recipes when you're in a brand-new place without much kitchen equipment?

I've found myself in an interesting situation. Last week my husband and I moved to Finland for 4 months for his job. The (furnished) apartment we're renting has only a modestly equipped kitchen, so a lot of my go-to staples aren't doable anymore (I'd like to avoid buying a whole spice rack or spending a fortune on cookware, because one of the other side effects of this trip is that it puts me temporarily out of a job). To complicate the problem, I've been spending three times as long at the grocery store because I don't actually know any Finnish, so I'm not always sure exactly what I'm buying.

The kitchen has:

  • induction stove
  • oven
  • microwave
  • refrigerator/freezer
  • 2 small saucepans
  • 1 medium skillet
  • 1 large metal mixing bowl
  • 1 glass baking dish
  • 2 cookie sheets
  • 1 chef's knife and cutting board
  • various spoons/spatulas
  • cups/plates/soup bows/utensils

Only dietary restriction is no shellfish. Other than that, I'm open to any ideas you may have... I can only eat so many lunchmeat sandwiches in a row.

I'm also open to purchasing cookware that will unlock a lot of new recipes if it's not too expensive (I just realized we have no can opener).
