Simple, tasty Chinese cold chicken dish

Sorry for no picture, but it's a very tasty recipe I made myself.

Ingredients: - 1 rotisserie chicken (does not need to be whole) -1 jar Lao Gan Ma chili oil with black beans - 2 stalks minced scallions - 3/4 cup soy sauce - 3/4 cup Chinkiang vinegar - Sesame oil (to taste)

  1. Tear apart the rotisserie chicken by hand into a large bowl, ripping the chicken into pieces.
  2. Empty 3/4 or all of the Lao Gan Ma chili oil into the bowl.
  3. Add soy sauce, chinkiang vinegar, and sesame oil.
  4. Blend the mixture with the chicken by hand. Add minced scallions and continue to toss the chicken mixture by hand.
  5. Cover and chill for 1 hour.
  6. Serve with a bowl of Chinese rice congee.
