South Indian Mango Curry(Seasonal)

INGREDIENTS:

Serves 2

  • *100g Dry Moringa Leaf

  • 100g Raw mango

  • 2g Mustard seeds

  • 50ml Coconut oil

  • 100g Shallots

  • 10g Red chilly

  • 50g Ginger

  • 50g Curry Leaf

  • 20g Green chilies

  • Salt to taste

  • 20ml coconut paste

*Substitute with 50 gms Moringa Powder which can be mixed with the coconut paste

DIRECTIONS:

  1. Peel and slice raw mangoes.

  2. In a pan boil the raw mangoes, Moringa Leaf, shallots, curry Leaf, green chilies with a dash of coconut oil.

  3. When the raw mangoes are soft add the coconut paste to it.

  4. Top it with a tempering of coconut oil, mustard seeds, curry leaf and red chilies.

Serve with appam or idiyappam.
