Salt, sweet and savory come together in this delightful Pumpkin Apple Soup with
Bacon thanks to the combination of creamy pumpkin, crisp bacon and tender cooked apples.
Ingredients
- 1/2 pound bacon, chopped
- 1 large onion, chopped
- 3 large cooking apples, peeled, cored and chopped
- 1/8 teaspoon pepper
- 1/4 teaspoon cumin
- 4 teaspoons chicken bouillon powder
- 1/4 cup firmly packed brown sugar
- 1 cup water
- 2 cups apple juice
- 1 teaspoon apple cider vinegar
- 1/2 teaspoon liquid smoke
- 1 29-ounce can pumpkin puree or 3 cups butternut squash puree
Directions

Cook bacon and onion in a large pot over medium-high heat for about 5
minutes, stirring occasionally. Scrape bottom of pan to loosen bacon bits.
Reduce heat to medium.

Add apples, pepper, and cumin; cover and cook for 5 minutes more, until onion
begins to turn translucent and apples soften.

Add bouillon, brown sugar, water, apple juice, vinegar, and liquid smoke.
Bring to a boil then reduce heat and simmer for 5 minutes to finish cooking the apples.

Stir in pumpkin, bring to a simmer again, and let cook for 5 minutes or longer
while flavors meld. Serve hot.
