Pumpkin Apple Soup with Bacon

Salt, sweet and savory come together in this delightful Pumpkin Apple Soup with

Bacon thanks to the combination of creamy pumpkin, crisp bacon and tender cooked apples.


Ingredients

  • 1/2 pound bacon, chopped
  • 1 large onion, chopped
  • 3 large cooking apples, peeled, cored and chopped
  • 1/8 teaspoon pepper
  • 1/4 teaspoon cumin
  • 4 teaspoons chicken bouillon powder
  • 1/4 cup firmly packed brown sugar
  • 1 cup water
  • 2 cups apple juice
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon liquid smoke
  • 1 29-ounce can pumpkin puree or 3 cups butternut squash puree

Directions

  1. Cook bacon and onion in a large pot over medium-high heat for about 5

    minutes, stirring occasionally. Scrape bottom of pan to loosen bacon bits.

    Reduce heat to medium.

  2. Add apples, pepper, and cumin; cover and cook for 5 minutes more, until onion

    begins to turn translucent and apples soften.

  3. Add bouillon, brown sugar, water, apple juice, vinegar, and liquid smoke.

    Bring to a boil then reduce heat and simmer for 5 minutes to finish cooking the apples.

  4. Stir in pumpkin, bring to a simmer again, and let cook for 5 minutes or longer

    while flavors meld. Serve hot.
