Requesting good spice combinations for fish (crappie, catfish)

Hello. I fish a lot and I mainly catch crappie and catfish. What are some good spice combinations for these fish (or any fish for that matter). Wanting to try different things. I'll tell you what I have...

Dill weed/Sea salt/Garlic salt/Minced onion/Morton Nature's Seasons/Chili powder/Ground allspice/Red Robin Signature Blend/Ground white pepper/Regular pepper/Cajun spice seasoning/Italian seasoning/Ground cummin/Tony Chachere's Creole Seasoning/Crushed red pepper/Parsley flakes/Garlic powder/Bay leaves.

I love to cook but I'm not the best cook. Sometimes I'll season my fish and it comes out way too salty. I like spicy and "herb-y" type flavors. What I use mainly is Tony Chachere's Creole Seasoning, garlic powder, black pepper, & italian seasoning. I know this may sound kind of silly but how do you know what spice combinations will go good together and ones that won't and/or make an overpowering "untasty" flavor. Anyone have any recipes or tips for me?
