This is not a traditional caprese recipe. If you are a traditionalist, you will probably hate this.
However, if you just love delicious things you will probably love me forever for showing you how to make this crazy awesome caprese entirely with ingredients from Trader Joe’s.
Ingredients: Mozzarella Cheese Log: Pre-sliced or whole. I used whole because I like the texture of the cheese better when I cut it myself with a serrated knife. Fresh Basil: regular, organic, or from the living plant. They usually have all 3. Check for mites on the plants before using them. Fresh Tomatoes: any of the big ones. I used the “organic tomatoes on the vine.” Rainbow Peppercorns Himalayan Pink Sea Salt Black Truffle Oil Eggs
This is a great recipe regardless how many people you have to feed. You can make the stacks one at a time or make enough for a whole family since they are assembled individually.
Prep Slice equal numbers of tomatoes and mozzarella. Poach one egg for each slice of cheese. I poached mine with a splash of vinegar for 3 minutes to get a fairly runny egg yolk. When I poached for 4 minutes, I had a soft-boiled textured egg yolk. Pull off large, medium and small basil leaves from the basil plant or package.
Assembly Plate the cheese directly onto your serving plates Add a large basil leaf on top of the cheese Brush black truffle oil onto the basil leaf and lightly season with freshly ground salt and pepper Add a slice of tomato Add a medium-size basil leaf Again brush black truffle oil onto the basil leaf and lightly season with freshly ground salt and pepper Add the poached egg Brush the egg with black truffle oil and lightly season with freshly ground salt and pepper Top with a small basil leaf
The preparation and assembly takes very little time since you are only slicing mozzarella and tomatoes. Picking the basil is lightning fast too.
